Strawberry Peanut Butter Filled Chocolate Cups: A Sweet Valentine’s Treat
Ingredients
- 1/2 cup natural peanut butter
- 1 packet (0.26 ounces) of freeze dried strawberries [or about 1/4 cup]
- Optional: 1/4 teaspoon strawberry extract
- 3 ounces dark chocolate
Instructions
- Using a mini food processor or mini blender, blend the peanut butter and the freeze dried strawberries together. If using the optional strawberry extract, also add into food processor. Blend or pulse everything until smooth, pink, and creamy. Set aside.
- Melt the chocolate in a microwave safe bowl in 30 second intervals.
- Place a 2 teaspoon amount of melted chocolate into a mini muffin pan that is lined with mini cupcake liners (I used a 12 cup mini muffin tin)
- Place a 1/2 tablespoon amount of the strawberry peanut butter filling on top of the melted chocolate in each mini cupcake liner.
- Place the remainder of the melted chocolate on top of the strawberry peanut butter layer, so that it is evenly distributed between the 12 chocolate cups.
- Optional: swirl any excess strawberry peanut butter on top of each melted chocolate layer for a garnish.
