If you're looking for a vibrant, flavor-packed meal that’s fresh, satisfying, and easy to prepare, this bright lemon-crusted chicken with a lemon vinaigrette salad is the perfect choice. Ingredients

For chicken:
  • 1 # boneless, skinless chicken tenders
  • Dry-
  • Zest of 1 lemon
  • 1/2 cup breadcrumbs
  • 1/4 cup shredded Parmesan
  • 1/4 tsp black pepper
  • 1 tsp thyme (fresh or dried)
  • Wet-
  • 1/2 cup Greek yogurt
  • Juice of 1 lemon
  • 1/4 cup milk
  • 1/4 tsp salt
For lemon vinaigrette:
  • 1/4 cup EVOO
  • Juice of 2 lemons
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 1 tsp dried or fresh thyme
  • 1 T honey
For salad:
  • 5 oz greens of choice (spring mix, arugula, romaine, kale, spinach)
  • 1/4 cup goat cheese crumbles
  • 8 ounces of great northern beans

Instructions

  1. Cut the chicken into bite size pieces.
  2. Mix together the Greek yogurt, lemon juice, milk, and salt. Set aside.
  3. Mix together the bread crumbs, lemon zest, Parmesan, thyme, and pepper. Set aside.
  4. Dunk each chicken piece into the Greek yogurt mixture and then into the breadcrumb mixture. Place on a foil lined baking sheet. Place in oven @ 400*F. Bake for 10-15 minutes or until internal temp is 165*F. Remove from oven and set aside.
  5. Place all salad dressing ingredients into a mason jar. Shake until emulsified. Set aside.
  6. Place greens of choice in a large bowl. Top with drained + rinsed great northern beans, goat cheese, and chicken bites. Drizzle with lemon vinaigrette dressing. Serve and enjoy!
