Ingredients

Cookie dough layer
  • 2 sticks softened butter, unsalted
  • 130 grams (or 1 cup) powdered sugar
  • 210 grams (or 1 + 3/4 cups) of golden whole wheat flour
Chocolate Layer
  • 3 ounces of dark chocolate (I like 70% cocoa)
Peanut Butter Layer
  • 1/2 cup peanut butter
  • 3 T maple syrup (or sweetener of choice)

Instructions

Cookie Layer
  1. Preheat oven to 350*F
  2. In the bowl of a stand mixer or a stand alone bowl with a hand mixer, cream together the butter and powdered sugar. Slowly add in the golden whole wheat flour.
  3. If the cookie dough appears dry and crumbly, do not worry - it will stick together as we continue.
  4. Place the cookie dough contents into a parchment paper lined 8x 12 inch baking dish.
  5. Use your hands to press the cookie dough into a flat layer in the pan.
  6. Bake cookie layer at 350*F for 25-30 minutes or until golden. Let cool on wire rack.
Peanut Butter Layer
  1. Mix peanut butter and maple syrup together in a bowl using a whisk. Continue to mix until all combined.
  2. Spread peanut butter layer over cooled cookie bar layer.
Chocolate Layer
