- 1 Red bell pepper
- 1 Yellow bell pepper
- 3/4 cup frozen diced mango (thawed on counter for at least 20 minutes)
- 1 bunch of cilantro
- Optiona: 1/2 red onion
- 1/4 cup olive oil
- 2 Tablespoons lime juice
- 1 teaspoon Jerk seasoning
- 1 teaspoon honey
Instructions
- Dice the bell peppers and place into a bowl
- Place thawed diced mango into bowl
- Mince cilantro using knife or ripping up by hand. Add to bowl with bell pepper and mango.
- If using red onion, dice and add to bowl
- Pour dressing over diced mixture. Stir to coat everything in lime vinaigrette.
- Serve and enjoy! Store leftover salsa in fridge in air tight container up to 7 days.
