This Mango Cilantro Salsa is a quick and easy recipe bursting with sweet, tangy, and fresh flavors. Made with ripe mangoes (or frozen for convenience), zesty lime, and aromatic cilantro, it’s the perfect topping for tacos, grilled meats, or a vibrant dip for chips. Ready in just 10 minutes, this healthy salsa is packed with vitamin C and adds a tropical twist to any dish!

Ingredients

For salsa
  • 1 Red bell pepper
  • 1 Yellow bell pepper
  • 3/4 cup frozen diced mango (thawed on counter for at least 20 minutes)
  • 1 bunch of cilantro
  • Optiona: 1/2 red onion
For dressing
  • 1/4 cup olive oil
  • 2 Tablespoons lime juice
  • 1 teaspoon Jerk seasoning
  • 1 teaspoon honey

Instructions

For salsa
  1. Dice the bell peppers and place into a bowl
  2. Place thawed diced mango into bowl
  3. Mince cilantro using knife or ripping up by hand. Add to bowl with bell pepper and mango.
  4. If using red onion, dice and add to bowl
  5. Pour dressing over diced mixture. Stir to coat everything in lime vinaigrette.
  6. Serve and enjoy! Store leftover salsa in fridge in air tight container up to 7 days.
For dressing
  1. Measure out all ingredients into a mason jar
  2. Seal jar shut tightly
  3. Shake up jar until salad dressing is well mixed [about 30 seconds]

Notes

  • If you prefer non frozen mango, go for it! You will most likely need 1-3 mangos depending on mango size.
  • If you prefer green or yellow bell pepper over red and orange, feel free to swap colors based on preference or availability.
