Ingredients
Rolled Oats – A fiber-rich base for long-lasting energy.
Milk (dairy or non-dairy) – Adds creaminess and nutrients. I like to use lactose free 1-2 % dairy for some added protein, vitamin D, and calcium. Oat milk, almond milk, and coconut milk are all great options too, ultimately you do you!
Plain Greek Yogurt – Provides protein and a tangy contrast to the sweetness. I like to get low fat plain Greek yogurt that is lactose free or sometimes the Icelandic style vanilla Greek yogurt (and omit the sweeter).
Chia Seeds – Boosts fiber and helps thicken the oats giving it a creamy, thick texture!
Sweetener of Choice – Cane sugar, honey, maple syrup, or a sugar-free alternative. All are great options depending on your health needs and taste preferences, note that amounts/portions will vary with sugar free alternatives such as stevia, xylitol, Sucralose, or others (follow package instructions per the respective label of sweetener)
Almond Extract – The key ingredient for that signature wedding cake flavor. I love using almond extract blended with pure vanilla extract in a lot of my baked goods and recipes. Using the almond extract exclusively in this overnight oatmeal recipe gives it that iconic wedding cake flavor. You do not want to skip it, just trust me!
Berry Jam – A fruity layer to complement the almond essence. I used a store bought strawberry jam that I had in my fridge but you could certainly make your own jam or a do a quick chia jam. I personally recommend strawberry or raspberry jam to keep with the flavor profile of the wedding cake.
Fresh Raspberries – A refreshing, antioxidant-rich and fiber filled topping. Plus it just makes it feel fun and special and who does not want breakfast to feel fun and special? I certainly wouldn’t!
How to Make Wedding Cake Overnight Oatmeal Parfaits
Mix the Base: In a jar or bowl, combine oats, milk, Greek yogurt, chia seeds, sweetener, and almond extract. Stir well and refrigerate overnight.
Layer It Up: In the morning, layer the chilled oatmeal with berry jam in a glass or jar.
Top & Enjoy: Finish with fresh raspberries (or sprinkles for a kid-friendly twist)!
Pro Tips for the Best Overnight Oats
Adjust the Thickness: If you prefer a thicker oatmeal, reduce the milk slightly. For a thinner consistency, add a splash more before serving.
Make It Vegan: Use plant-based milk and yogurt. Just note the protein content will vary when using plant based yogurt so look at the nutrition label if you want similar protein to Greek yogurt. Or pair a plant based protein source with this overnight oatmeal parfait in the morning for balance.
Birthday Cake Remix: Swap the raspberries for rainbow sprinkles and a dash of vanilla extract for a fun twist.
