Almond Citrus Poppy Seed Muffins with a Greek Yogurt Honey Orange Spread

A delectable, moist muffin with both a zesty orange and nutty almond flavor and subtle pops from the poppy seeds. This muffin recipe is easy, quick, and packed with fiber thanks to golden wheat flour and almond flour.

Ingredients

For Muffins
  • 1 cup almond flour
  • 1/2 cup + 2 tablespoons golden whole wheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3/4 cup milk of choice
  • 2 eggs
  • 1/2 cup sugar
  • 3 tablespoons olive oil or canola oil or melted butter
  • 1 teaspoon poppy seeds
  • 1 teaspoon almond extract
  • Zest of 2 oranges
For Greek Yogurt Honey Orange Spread
  • 1/2 cup plain Greek yogurt
  • 1-2 T honey
  • 1/4 tsp almond extract
  • juice of 1 orange

Instructions

For Muffins
  1. Mix together almond flour, golden wheat flour, baking soda, baking powder, and salt. Set aside.
  2. Mix together orange zest and sugar. Mix with hands for 1 minute to infuse flavor. Add in almond extract and poppy seeds. Mix. To this mixture whisk in the eggs, milk, and oil. Mix until combined.
  3. Add in dry ingredients to wet. Whisk well until well combined.
  4. Line a muffin tin with muffin liners. Scoop 1/4 cup measurement into each lined muffin tin.
  5. Place in oven. Bake for 20-25 minutes or until a toothpick can be inserted and comes out clean. Let cool on wire rack.
For Greek Yogurt Honey Orange Spread
  1. Mix Greek yogurt, honey, orange juice, and almond extract together until all ingredients are well distributed.
  2. Spread 1-2 spoonfuls on top of each muffin. Enjoy!
