Carrot Cake Baked Oatmeal

Ingredients

For Carrot Cake Baked Oatmeal
  • 2 cups rolled oats
  • 1 cup of unsweetened apple sauce
  • 3/4 cup shredded carrots
  • 1 cup milk of choice
  • 1 egg
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 tablespoon shredded coconut [unsweet or sweetened]
  • 2 tablespoon ground flax seeds
For Greek Yogurt Frosting
  • 1 cup plain Greek yogurt
  • 1.5 Tablespoons brown sugar
  • 1/2 teaspoon pure vanilla extract

Instructions

For Carrot Cake Baked Oatmeal
  1. Preheat oven to 375*F. Line a 8 x 8 baking dish with parchment paper.
  2. Place 3/4 cup shredded carrots into a fine mesh strainer and squeeze the carrots to remove excess liquid. Discard liquid or use in beverage.
  3. In a bowl, mix together rolled oats, 1 cup of unsweetened apple sauce, shredded carrots (once squeezed), 1 cup milk of choice, 1 egg, 1/4 cup brown sugar, 1 teaspoon baking powder, 1/2 teaspoon salt, 1 teaspoon ground cinnamon, 1 teaspoon pure vanilla extract, 2 tablespoon shredded coconut [unsweet or sweetened], and 2 tablespoon ground flax seeds.
  4. Mix everything together until all combined.
  5. Pour batter into the lined 8 x 8 baking dish. Spread out to create an even layer. Place in preheated oven and bake for 40 minutes.
  6. Remove from oven and let cool for 20 minutes. Top with Greek Yogurt Frosting. Slice into 6 - 8 slices. Enjoy!
For Greek Yogurt Frosting
  1. In a bowl, mix together the 1 cup plain Greek yogurt, 1.5 Tablespoons brown sugar, and 1/2 teaspoon pure vanilla extract.
  2. Spread on top of the baked oatmeal.
Garnish
  1. Sprinkle chopped walnuts on top of Greek yogurt frosting.
  2. Serve and enjoy!
